The audio on HDMI is digital PCM, Dolby surround and the like. You do need an adapter box for it....granted if you have multiple HDMI sources some of the HDMI switches have headphone/line out...
I don't have a 4K TV or signal source, but I do know that there were some features in some newer versions of HDMI had extra wires to support (the original standard left some pins unused). If all the leads/pins your equipment needs for the features it supports are present and your not running over 16' of cable typically there's no difference in cables between cheap and expensive as the signal is all digital with a small amount of error correction...It either works perfect, intermittently, or not at all.
