One other thing I've noticed is that the picture isn't level, it slopes from left to right. Is there an adjustment for that, or is it a symptom of another problem?

The bending when you turn up the contrast is related to the rather primitive sync take off scheme; it picks the sync off after the contrast control, after the video output stage in fact. Bending and "flagging" with an overly strong signal or high contrast is generally just part of the charm of such early designs. Does it straighten up if you reduce the signal strength at the antenna input?
To level the picture you rotate the yoke. There has to be something to loosen so the yoke can turn, then you tighten it again.
On the low sound, have you replaced C4, the little 4 mfd electrolytic that connects to pin 2 of V9 (the 6T8 tube)?
