A possible way to start this project would be to obtain either a "monochrome VGA" monitor (ideally, a Super VGA mono one; I think some were made), or just a color computer CRT monitor (the bigger, the better). In any case, I do not think you could build an HD monitor from a standard 21" B&W CRT from the 50's, but maybe something smaller. The computer monitors could have usable video amps, flybacks, and/or yokes for such a project.
