Thank you all for the nice comments, and to Eric and John for offering your spare knobs to me. The knob shaft is the smaller one of the two sizes, either 1/8" or 3/16" as opposed to the volume/power inner knob which is definitely 1/4 inch. I may have a spare here already, so I will let you both know.
After getting the set, I read the very informative discussion of 621 cabinets started by Tom (that was on ARF), and this appears to be more likely mahogany than walnut, especially judging by the center-section components and the left and right edge stripes. The center pieces (speaker grille, screen bezel, and center cover) are very dark brown, basically matching the bakelite knob color, and the edge stripes are either also very dark brown or may be black if that is typical. Where the finish on the edges and the middle section has chipped or worn off, the wood underneath does appear reddish, but I am a complete non-expert when it comes to wood and finishes.
The owner was a very nice man, who had done some research on these sets. He had inherited it from his uncle, who was the original owner, a number of years ago.
I may not get to any restoration work on this set for a while, as I have a few other projects in progress already, but I will keep you all informed when I do get going on it.
