Yes you can use the 8-pin for the audio and video. I have an old 8-pin adaptor with pigtails for the A/V. But the UHF and 1/8" mini will do the same. They are both the same A/V path in through different connections. The 8-pin was invented to eliminate multiple wires and keep it to one simple connection for all A/V.

The UHF is just a relic of the early days of television video connections. The BNC and RCA were yet to be invented.
