Can I now start advanced testing and learning? Because honestly I can't find anyone to do this! I would rather just teach myself.

An audio generator would be handy.
To make sure the RF (EICO 320) and audio generator are putting out the correct frequency a frequency counter is a good idea.
Things like TV tuner and TV IF alignment are rather advanced things to take on, you have to make sure your equipment is good or you will make things worse. Many people try not to effect alignment when they re-cap and troubleshoot so that they can avoid re-doing the alignment on a TV set.
You really need a sweep generator to align the IF of a TV or FM radio.
The sweep generator should have a marker generator included or added.
A marker generator puts out several accurate frequencies at once to help identify the location of those frequencies on a sweep display.
I would avoid trying TV or FM alignment until you get more experience.
Aligning AM radios is a far better place to start
There also might be some accessories like demodulating probes that you may need.
