grundig stereo console 390 u/s

i have this console at my house, it is non working from 1979 when the transformer burned because of leaky filter caps, and my uncle replaced the fuse with a wire.
the cabinet is in very good shape, the reel-to-reel and the turntable are working fine. the speakers also are fine.
the amplifier is an NF2
i recapped the power supply, changed the rectifiers, and send several years ago the transformer to a repairman, but it dissapeared with the transformer.

the power transformer is not a problem, because i have the specs and i can make another.

i plan to recap the entire unit, because the paper caps are in very bad shape.
with what kind of caps i can replace the paper caps?
how i can tell if the audio transformers are in good shape?
the original rectifiers where selenium rectifiers, it's true that i must expect more voltage in the B+ with modern rectifiers, and i must put a resistor to drop this extra voltage?
